Larry Stalcup
Lawrence
Stalcup, Ph.D. has been teaching Hotel and Restaurant Management at Georgia
Southern University since 1997. Previous to his moving into academia
he worked for eleven years in hotel and restaurant management in New
York, Texas and Puerto Rico. During this time, he worked in various aspects
of hotel operations and in human resources. While working in operations,
he was on the opening staff of The New York Helmsley in Manhattan and
The Wyndham Hotel, Greenspoint in Houston. In addition he also spent
two years working in economic development as a Peace Corps volunteer
in Costa Rica. Dr. Stalcup has degrees in Hotel and Restaurant Management
from Purdue University and Cornell.

Stephen Minton
During
Chef Stephen Minton, C.E.C.'s 34 years as a culinary professional he
has worked in all aspects of the industry, including institutional feeding,
hotels and resorts and independent restaurants. He owned the restaurant,
Caribbean Cafe in Boone, NC for 12 years and is partner in Jaman Caribbean
Cafe in Statesboro. He was also selected to attend the National Foodservice
Management Institute's (NFSMI) "Healthy Cuisine for Kids" seminar
at the Culinary Institute of America's Greystone campus in California
in 2007. His skills are in great demand as a demonstration chef at restaurant
shows around the country, including the annual National Restaurant Show
in Chicago. He has taught in a culinary program in North Carolina and
is currently the Chef-Instructor in Georgia Southern University's Hotel
and Restaurant Management Program.

Frieda Brown
Frieda
F. Brown, M.S., R.D., L.D., is a retired Assistant Professor of Nutrition
and Dietetics and Director of the Didactic Program in Dietetics at Georgia
Southern University since 1976. She has served as project coordinator for
numerous Nutrition Education and Training (NET) grants administered by
the Georgia Department of Education since 1980. Most recently, she participated
in the development and production of the video series, “Building
Healthy Student Bodies,” which was funded by the School Nutrition
Program of the state Department of Education. In 2005, Frieda was also
recognized as the 2005 Friend of the Program. Frieda earned her degrees
from the University of Tennessee at Martin and Knoxville. She has taught
college level courses in nutrition and food science since 1971.

Rebecca Black
Rebecca
Black, MS, RD, LD, has worked in a variety of practice settings including
public health, hospital, and private practice in the management of
her own nutrition consulting business from 1987-2003. Her undergraduate
major program of study was Food Service Management and she has worked
in institutional foodservice for the Veteran Administration Medical
Center, University Hospital, and has served as a consultant to Head
Start, school foodservice, and the restaurant industry in the Central
Savannah River Area. She currently is on the faculty of Georgia Southern
University as a Clinical Instructor teaching in the Nutrition and
Food Science program, College of Health and Human Sciences.
