OVERVIEW
You are invited to attend Culinary Institute II , sponsored by the Georgia
Department of Education. This is a week-long (36 hours) program designed
for school nutrition managers to develop management skills for meal planning
and production following the guidelines of the federal Healthy School Meals
Initiative. This program will provide you with an opportunity to use computer-assisted
menu analysis software, prepare meals, and have a personal health evaluation.
You and your colleagues will refine your skills under the guidance of a
certified chef educator.
Culinary Institute II, is a program of instruction and laboratory experiences which focuses on a higher level of culinary skills and understanding of menu planning, production, HACCP application and food science. Faculty from Georgia Southern University's College of Health and Human Sciences will conduct all classes with support from the Georgia Department of Education.
